I have been sewing up a storm lately. The problem is, it’s all Christmas presents for people who read my blog, so I can’t share! But one day a little while ago Brad and I were actually off work on the same day (which is quite a rare thing around here), so we decided to bake and decorate some Christmas cookies.
Lottie loved helping to cut out the shapes.
Kelsey loved to lick the frosting off the beater. 
(Brad loved that too… if we’re being completely honest here.)
Oh my. I have been thinking of whoopie pies for days. Days and days. And days.
Yesterday I finally had a chance to make some. And oh my! I’m a pretty good baker. Not so much today.
My first thought was to run over to my friend Pretty Kitten and grab her recipe. I’ve had her cookies before and they were de.lish.ous. Perfect cookies. Perfect filling. Perfect cookie:filling ratio.
Imagine my sadness when I didn’t see the recipe on her site! Of course, I was in too much of a hurry to e-mail her and get the recipe. I thought, “I’ll just find one online.”

The tip to holiday baking is to do it all at once. I remember my grandma used to say, “It’s just as easy to make 4 dozen cookies as it is to make one.” Sure, she was referring to just a regular baking day, not the holidays, but the same principle applies.
I love baking. (Almost) every Wednesday I bake cookies or some other treat. So, a few weeks ago, instead of making just my regular batch of cookies, I made three. One batch of three different kinds of cookies. And you know what? It really didn’t take me much longer than making my regular batch. Here are the three types I made:
